Pantry Salsa

Per my sisters request I am posting a Salsa Recipe.  This is not the best Salsa in the world, but that has no stopped me from devouring several bowlfuls while waiting for my dinner to be served.  This is from a restaurant that I worked for while in college.  We would make this salsa in a 5 gallon bucket and use a giant Thunderstick, so I only remember ingredients.  As my sister and I tweak this recipe we will add amounts.

This salsa can be made with ingredients from your food storage or pantry!!  And don't lie to yourself, if you ever have the "opportunity" to live off your food storage at some point you are going to crave Salsa!!

The Ingredients:
Canned Tomatoes
Onion - 1/2 to 1 small sized.
Jalepenos - 3-4 slices and maybe a little juice
Garlic Salt (or Garlic and Salt) - 1/2tsp+ Garlic, 3/4tsp+ Salt

Start dumping ingredients into your blender!

No need to chop your onions!
Add Jalepenos, Salt and Garlic (start with a small amount and increase as needed  - be sure to taste on a chip, since the chips have salt).
Blend Away!!  You could just simply chop up the ingredients by hand and have a fresh salsa look!
Serve on Tortilla Corn Chips!!  Yummy!

Blogging Vacation Recap - 4

We spent two weekends at Country Springs Hotel!  They have an indoor water park and I could pretend it was summer.  It was nice and warm inside, it snowed one of the days (so it was nice not to witness the flurries).  The kids loved every minute of it. 

The boys on our first trip it took them a little while and for Grahm some serious coaxing to try the slides. However, once they did it we didn't see them again until bedtime!!  The park is not too large inside, so we didn't feel like we needed to be with the boys every second.

Charlotte is a suicidal fish.  She will jump in, walk off the benches, lunge for anyone out deeper, and anything else a 2 year old should not be doing!!  Sometimes she would get a little water and she would still be laughing and repeat whatever crazy move she had just done.  It is fun, since the boys are more cautious in the water.  Her craziness even got me to do more than dangle my legs in!

Blogging Vacation Recap - 3

Jason Had a Birthday!!

We had a quiet family celebration.  He had to work all weekend.  He left Friday morning and we didn't see him until Monay night - he was tired.  He asked for Corned Beef, Potatoes, Salad and Raspberry Cheesecake!!  For gifts, last minute he decided that a fun hobby in Japan would be hunting for buried treasure - so he asked for a Metal Detector!!  He and the boys will have lots of fun, hope he finds some fun things.

I know this time of year it is hard to say this, but I am going to miss the snow!!  When it snowed in late February I had to take a few pictures, so I can look at them in the winter in Japan and have a little dose of home.

Blogging Vacation Recap-2

Crazy Day!  At Jayce's school they have spirit week and there is theme for each day of the week.  Day 1 - Pajama Day (easy enough).  Day 2 - Dress Like a Twin (excuse me - but what does that mean).  Day 3 - Crazy Hair and Mixed up Clothes Day. Day 4 - School Colors (easy)

We ran into a glitch for Day 2.  I told Jayce on Day 1 to talk to someone at school about what they wanted to wear the next day to match (since this is how Jayce understood the day).  I told him I would prefer he work something out wearing what he already has - but if that could not be done that I would go and buy him the "Cracked Egg" Shirt at Target (since I knew that one of the boys had it).  Of course this is what they decided to do, so I sent Jason on his way home from work.  He couldn't find it.  Jayce didn't believe him, I said after dinner we would go to another Target and look.  We couldn't find it.  So we called the other boy and they worked something out - yeah.  When Jayce came home he told me that their other friend had found the shirt (that was the first I had heard of a third child - oops).

Day 3 - Was fun, I tried to make him look super mixed up.  How do you do that with a boys wardrobe.  Their wardrobe is designed to mix and match, they don't usually have stripes and plaids to clash. 
We put red and blue spikes in his hair (before we go to Japan I am buying all the colors!!).  T-shirt inside out - one arm rolled to expose Pink Striped Arm Warmer, Neck Tie, Pants - one leg rolled to expose Dad's Black Dress Sock, Basket Ball Shorts - and there you have it!!

Blogging Vacation Recap-1

One day when I was feeling particularly yucky, Jayce brought home a balloon.  They had been studying gases at school.  This of course causes severe jealousy in all siblings and can result in death (at the hands of the mother).  When Jason arrived at home, he was instantly given the task of filling up more balloons for all the children.  Then we pretended they had no parents and that no rules existed (so they would let me sit on the couch and be miserable in peace!).  I grabbed the camera after awhile when I realized that moments like this are wonderful (if I can let go of my need to control and be orderly)!  Pure, genuine laughter - the best medecine in the world!!

I have had people wondering about my blogging vacation!  So here is the answer.

There is no Sunshine!  No sunshine outside.  No sunshine inside - I think I exhausted my winter supply of personal sunshine.  Add a few crazy female hormones and life is plain old no Fun.  So I spend most days trying to navigate these awful feelings wishing someone could tell me what to do to get out of it - besides visiting Hawaii!!
